I had a request for a soup recipe and being its weight loss time for so many people, I thought I would share this recipe with you.
Now I am sure there are a million recipes for this online but this is how I made it and how I remember having it in my childhood. The saying was always “the more you eat, the more you lose”. I am not sure how true that is but it is an amazing soup, full of veggies that just gets better while sitting in the fridge. You really can add just about anything to this, but if you add any meat or starchy vegetables just be aware that you will lose the weight loss possibilities. 🙂
Weight Loss Soup
1 Onion, chopped
3 cloves Garlic, finely diced
2 quarts Tomato Juice
3 Carrots, diced
1/2 head Cabbage, chopped
1 pound Green Beans, fresh or frozen
1 medium sized Turnip, Rutabaga or Kohlrabi, diced. Your choice
3 Tomatoes, diced
3 stalks Celery, chopped
salt and pepper to taste
- Heat 2 TB Oilve Oil over medium heat in a large soup pot. Add onion and garlic. Cook until onions are translucent.
- Add all vegetables and tomato juice to pot. Add enough water to cover all vegetables if needed.
- Simmer over medium low heat until all vegetables are tender. Season as needed
- Enjoy! Soup will keep in fridge for a full week.
