White Chocolate Pistachio Cookies!

My husband is going to a board gamers boys weekend at a cabin up north. I have been thinking of sending along some cookies and when I think of delicious cookies….these are pretty high on my list. They are still and forever, one of my favorite cookies that I have made. And thank goodness they now have shelled pistachio nuts available at most stores! SCORE!

  • 1 1/2 cups softened butter
  • 1/2 cup brown sugar
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 tsp baking soda
  • 2 tsp vanilla
  • 2 small boxes Pistachio Pudding
  • 2 tsp salt
  • 3 1/2-4 cups flour
  • 1 package white chocolate chips
  • 2 cups shelled pistachio nuts

Preheat oven to 350. Beat the butter and sugar until light and fluffy. Add in eggs and beat until well combined. Add in the baking soda, vanilla, pudding mix and salt. Mix until combined. Mix in flour. Fold in chip and nuts. Spoon or scoop cookie dough onto a cookie sheet and bake for 8-12 minutes. This will depend on your oven. You want the cookie to be lightly brown on the edges, cooked on the bottom and almost all the way cooked in the middle. This will take some practice to get your perfect cookies but it is a skill that always comes in handy. 🙂
