Last week I received a new kitchen gadget! A pressure cooker. Kevin and I watch a lot of cooking shows and so many of the contestants are using them! Almost every episode. Caramelized Carrot Soup
1 stick Butter
1 Bag of Carrots washed, trimmed and cut into chunks
1/2 tsp Baking Soda(not a type! It helps with the Caramelization)
2 cups water or Carrot Juice
Add all ingredients into pressure cooker and set for 20 minutes. When able to open pressure cooker, add carrots to food processor. Process until smooth. I added some Ricotta Cheese to food processor just to add a little richness.
I really enjoyed this! It is so creamy and has a great flavor and it took no time at all to whip up.
