Lemon Bar Recipe

I love a good Lemon Bar and this is by far the best I have tried out. It has come out every  time I have made it. Here goes….give it a try?

Crust:

1 cups Butter

1 cup Confectioners Sugar

2 cups Flour

Filling:

4 eggs, Whole

2 cups Sugar

1 tsp. Baking Powder

1/4 cup Flour

3/4 cup Lemon Juice/ fresh Juice and zest

Preheat Oven to 350. Prepare 9×13 pan

Mix butter, Confectioners Sugar and flour until dough forms. Press into pan and bake until golden brown. about 15 minutes

Mix eggs until lighter in color. Mix sugar, flour and baking powder in bowl to prevent lumps. Pour slowly into the eggs. Mix until smooth. Slowly pour in Lemon Juice.

When crust is browned, pour filling over warm crust and place in oven until filling is set. 20-30 minutes.

Let cool completely, cut and then dust with powdered sugar.
